
Our Story
Original recipe Gifu Fuyu is the product of the time in my life when I was making monthly work trips to Japan. Standing in a persimmon shop in downtown Tokyo, I was struck by how the mild sweetness of a fuyu would complement the smoky strength of an habanero. I started dabbling in creating my own hot sauces. My traveling companion, translator, and friend was born in Gifu, home to fuyu persimmons. I batched a hot sauce with fuyus and some homegrown peppers... the result was magical!
After a lot of market testing with some willing friends/test subjects and all the state-required formalities, Gifu Fuyu is ready for sale! The peppers are organic and hyper-locally sourced from my home garden.
